This LCHF High Fiber Bread is a fantastic way to get more fiber in your diet!

And, it tastes sooo good. Oat meal is not Keto friendly, but oat fiber is.

Oat fiber is made of the insoluble fiber of the non-digestible oat hull. It provides flavor and texture.

However, it isn’t readily available in my neighborhood so I ordered this brand from Amazon. It’s organic and it’s a great deal. I bought the 1.5 pound package and will keep it in the fridge to keep it fresh.

How does it taste?

I have been low carb high fat enthusiast for a while now, so I know the importance of a good Keto bread recipe.

The big question with all of them is: What does it taste like?

Does it taste like bread with wheat flour, or eggy like a waffle.

This this bread taste like bread.

I had it toasted with butter, and that sandwich that you see in the picture…I ate that right after I took the picture, and it was delicious.

I even made a grilled cheese for my teenager and she loved it too.

It has a nice nutty flavor from the almond flour, and oat fiber gives it a grain flavor.

The texture is…dare I say the word? Moist and dense.

There is not the eggy taste that so many LCHF breads have because this recipe uses only the whites of six eggs.

Beginning Keto & Dietary Fiber

No matter who you are, getting enough fiber in your diet has all sorts of health benefits.

If you are on healthy ketogenic diet you know that it’s not all about bacon and cheese. You have to have some veggies too.

When I started Keto, I was not prepared for this.

I ate lots of salad, and drank water. But I still didn’t get enough fiber and I had some nasty side effects.

Fiber is especially important when you’re changing your diet because it acts as a buffer and helps keep things moving.

Soluble fiber is especially good because even though it cannot be digested, it absorbs water and make a sort of gel that expands and keeps your digestive tract happy and moving.

Both oat fiber and psyllium husk are soluble fiber.

Keto or not you should get between 24 and 40 grams of fiber per day (women need more).

This bread has 16 grams of fiber per slice – that’s as good as taking fiber supplements.

If you have a sandwich (two slices) you will use up eight carbs, but that will be most or all of your fiber for the day.

To contrast that with some other Keto veggies, there are 4.7 grams of fiber in a whole head of lettuce, 2.4 grams in a cup of broccoli, and 2.1 grams in a cup of cauliflower.

In the CastleintheMountains.com tradition, I need to tell you how much easier this will be if you find all your stuff before you start.

If you are a beginning Keto person, or a beginning cook, this can really help things go smoothly for you.

This recipe is a little more involved than some of our other recipes, but in the end it still amounts to mixing up a bunch of stuff and putting it in the oven.

Easy Cooking Tips:

  • Keep the Wet and Dry Ingredients Separate.

I put all of the dry ingredients in a the mixing bowl first, and then thoroughly mixed them before adding any of the wet ingredients.

The reason for this is that baking powder is a chemical reaction that starts as soon as the acid (cream of tartar) in the powder gets wet.

You want your bread to rise as much as possible and to be even throughout the bread.

If you mix all of the dry ingredients really well before you start the reaction by adding the wet ingredients, the end result will be better.

  • Do not skip the boiling water…

Boiling water actives the psyllium husk.

I usually put a small pan of water on the stove to boil and scoop out as much as I need with a metal measuring cup.

Doing it this way ensures that you are getting the right amount, it reduces the chance of burns and keeps the water piping hot until it hits your mixture.

This is an important step.

How to separate eggs

This bread tastes more “bready” and less eggy because it only has the whites of the eggs in it.

This is an easy thing to do.

I do it with the shell, but I have also seen it done by hand, or with a spoon.

If you don’t have six eggs or don’t want to mess around separating them you can always just use 3 whole eggs.

Your bread may have an eggy flavor to it but I kind of like that taste. It’s up to you.

What to do with the yolks

You are going to end up with six extra egg yolks, and if you are like me, you don’t want to just throw them away.

There are lots of recipes for Creme Brulee and such.

Cooling and Slicing

I can never wait for bread to get all the way cold before eating it, and this bread was delicious warm out of the oven.

To slice bread it’s easier if you have a bread knife – one of the long skinny ones with the serrated edge.

Bread is easier to slice when it is cold.

If you want thin, not squished down or crumbled pieces don’t press down too hard and do more of a sawing action.

let the serrated edge do the cutting.

Storing

Because this bread has so many eggs in it you should store it in the fridge.

The best way is to cool is all the way, and then put it in a zip-lock with a paper towel.

It should keep for three or four days in the fridge.

If that is not enough time you could slice the whole loaf and freeze it.

What Goes with High Fiber Bread

Well of course there’s butter, or wine and Brie. And slice thin this makes great toast to go with eggs and bacon.

Ingredients

Dry Ingredients

Wet Ingredients

  • 6 egg whites
  • 1/3 cup vinegar
  • 1 cup water boiling
  • 2 tbsp. olive oil

Instructions

  • Preheat oven to 350°

  • Boil a cup of water. I usually do this in the microwave.

  • Grease a 4" X 8" bread pan

  • Put all of the dry ingredients in a large mixing bowl and mix thoroughly. Make sure there are no clumps.

  • Add the egg whites, vinegar and oil to the dry ingredients and mix just until combined completely. Not too much, you don't want to overmix this.

  • Add the boiling water to the mix and mix well. again don't over mix. This should result in a dough ball.

  • Remove the dough ball and form it to fit in the bread pan sort of evenly. It will be a little uneven with some gaps around the edges. That's okay.

  • Put it in the oven and bake for 80-90 minutes at 350°. It is done when the internal temp is between 200 and 210.

  • When the bread is done cooking, cool in the pan on a cooking rack for 10 minutes or so, and then remove from the pan and cool completely on the rack without the pan.

    You may want to put it back in the oven for a few more minutes with out the pan to crisp the crust and dry the bottom of the loaf.
