I’m a long time lover of enjoying peanut butter for breakfast in some way. From smoothies, to cookies to a plain ole peanut butter sandwich, you really can’t go wrong with a healthy dose of protein packed peanut butter.

Now unless you’re buying natural “just peanuts” peanut butter, there’s often added sugar and oil in store bought peanut butter.

So if you’re trying to avoid oil and refined sugar, this peanut butter recipe is for you. Plus, it’s so simple to make and comes together in a literal 2 minutes!

Can you even beat that??

How to make peanut butter in your Vitamix

Peanut butter with just peanuts is as simple as adding peanuts to your blender. I like to use anywhere between two and four cups per batch.

You’ll need a minimum of two cups to have enough volume for your machine to catch and blend nicely. (At least, in my experience.) More than four cups I find a bit difficult to get an even consistency, even when using the tamper.

So the sweet spot is anywhere between two and four cups here.

So start by measuring out your peanuts.

Add them to your Vitamix with the optional salt, if using and start blending on high speed.

The peanuts will quickly break down into a crumbly texture, and start clumping together.

About a minute of processing will turn your nuts into creamy, smooth nut butter.

Now, if you don’t have a Vitamix, you can still make creamy, delicious peanut butter in a food processor. It will take a little longer to break down from peanuts to butter, but it will!

If using a food processor, take breaks during the blending process to prevent over heating of your machine. Scrape down the sides as needed, and pause every 30-60 seconds for at least 30 seconds and continue. Keep repeating this process until you get smooth peanut butter.

How to store homemade peanut butter

Transfer your peanut butter to a clean, glass jar or container and you may store at room temperature for every day use for up to two weeks.

I bet it would last longer than that too, but I haven’t been able to keep mine longer than that to test it!

Alternatively, store in the refrigerator for even longer, although the spread may slightly harden, without affecting the flavour.

Making homemade peanut butter has never been easier than with your Vitamix, and this recipe uses only 1 ingredient, PEANUTS!

Ingredients

  • 2-4 cups roasted peanuts unsalted
  • ⅛-1/4 teaspoon sea salt optional

Instructions

  • Add the peanuts and optional sea salt if using to your Vitamix. Blend on high, using your tamper to push the peanuts down while blending, until a smooth consistency is reached. The peanut will quickly go from whole peanuts, to ground up pieces to creamy peanut butter.

  • Store in a clean sealed jar or container.

Notes

To make peanut butter in the Vitamix, don't use less than 2 cups of peanuts. You'll need some volume for it to blend nicely.

If you want to make more than 4 cups at a time, I suggest multiple batches.

If using salted peanuts, skip the additional sea salt.

I've kept my peanut butter in a sealed jar at room temperature for up to 2 weeks. You may refrigerate for longer but it may harden slightly. Flavour will not be affected.
