The Verdict

I was skeptical about this flavor – and my husband was even more apprehensive.

We love bacon and all – but mixed right into ice cream???

I’d heard about ice cream with bacon in it…and I knew a lot of people love it.

But the flavor just sounded a little too weird for me. So I kept putting off making this recipe… and then putting it off some more.

Finally, after 2 years of procrastinating, I garnered the courage to conquer the flavor.

My husband, however, was still full of disbelief and skepticism.

So I made it – and it was fun to make. Bonus!

I don’t know why? But I loved making the candied bacon.

Then we tried it. The whole family thought it was delicious.

Even my husband commented that it was one of his favorites. And trust me, that’s saying something! I’ve put a lot of different ice cream flavors in a bowl in front of him! Men and their bacon I guess.

So don’t put off making this recipe – give it a try. You will be pleasantly surprised!

The Bacon

Ahh…the bacon.

Yes! For this recipe you get to candy the bacon.

It may sound a bit weird – but it’s fun and delicious.

You sprinkle a little bit of brown sugar over the bacon and then cook in the oven.

Make the Bacon Crispy

When you cook the bacon, make sure that the bacon is not underdone.

For ice cream, you’ll want to cook the bacon until it’s nice and crispy.

A crispy bacon will have a better texture once it is frozen into the ice cream.

Crumble the Bacon Small

The bacon should be crumbled into small pieces.

Why?

First of all, like the crispy-ness of the bacon, the size of the bacon will affect the texture of the ice cream and smaller pieces are just more pleasant to eat.

Second, if pieces are smaller their will be more of them and will thus permeate the ice cream better and produce a better overall flavor.

Please note – my bacon pieces in the above picture are a little too big. Make sure to crumble bacon into small bits.

Ingredients

Bacon

  • 6 bacon strips
  • brown sugar

Ice Cream Base

  • ¼ cup butter (salted is better)
  • 1 cup milk
  • ¾ cup brown sugar
  • 2 cups heavy whipping cream
  • ¼ tsp vanilla extract

Instructions

  • How to make ice cream without an ice cream maker.

Candy the Bacon

  • Preheat oven to 400.

  • Place bacon strips on a baking sheet and sprinkle approximately 2 tsp of brown sugar evenly over each strip of bacon.

  • Bake in heated oven for 8 minutes. Flip over and bake an additional 8 minutes.

  • Bacon should be well-done and crispy – the crispy-ness of the bacon will make for a better texture in the ice cream.

  • Allow bacon to cool completely (you can cool them on a rack).

  • Once cool, crumble, chop, or cut bacon into VERY SMALL pieces (about the size of bacon bits). The smaller bacon pieces will produce an ice cream with a better texture and flavor.

Ice Cream Base

  • In a saucepan, melt butter, then stir in milk and brown sugar.

  • Stir until well combined. Cool.

  • Stir in heavy whipping cream and vanilla.

  • Chill in refrigerator until completely cool – about 2 hours.

  • Churn in ice cream maker about 25-30 minutes or according to manufacturer’s instructions.

  • Add bits of candied bacon to churning ice cream during the last 5 minutes of mixing.

  • Enjoy!

  • Bake in preheated oven for 8 minutes. Turn. Bake an additional 8 minutes.

  • Make sure that bacon is well-done and crispy – crispy bacon creates a better texture in the ice cream.

  • Cool bacon completely on a rack.

  • Crumble or cut cooled bacon into VERY SMALL pieces – they should be similar to bacon bits in size. The smaller bacon pieces produces an ice cream with a better texture and flavor.

Ice Cream Base

  • In a bowl, beat eggs until they are light and fluffy.

  • Melt butter in a saucepan, then stir in milk and brown sugar.

  • Pour about half this heated milk mixture over the beaten eggs.

  • Beat well to combine and then return back to saucepan.

  • Continue to cook over low heat until mixture thickens and begins to stick to the back of your spoon.

  • Allow mixture to cool slightly and then stir in heavy whipping cream and vanilla.

  • Chill in refrigerator until completely cool – about 3 hours.

  • Place in ice cream maker and churn about 25-30 minutes or according to manufacturer’s instructions.

  • During the last 5 minutes of mixing, add bits of candied bacon to churning ice cream.

  • Enjoy your bacon ice cream!
